Summertime is in full swing and so are all the fun, summer BBQs! For all of you going bread free, gluten free, Paleo, etc. this is a great "bun" recipe!! There is no real science behind this recipe, and you can't mess this one up (hopefully), so get creative and load up on the spices!
Sweet Potato Bun
1 large sweet potato, thinly sliced
olive oil
salt and pepper
oregano
Preheat the oven to 375 degrees. Place parchment paper down on a cookie sheet. Place sweet potatoes on the parchment paper. Drizzle with olive oil, sprinkle with salt, pepper and oregano. Cook for 10 minutes and then flip over the "buns" and cook for 10 more minutes. Serve with your hamburger and enjoy a healthy, summer dinner!
