Spinach, Veggie Omelet

I LOVE breakfast! 

Like, I love it so much I could eat it for every meal of the day. Have I said that before? I feel like I have, but I really do. This breakfast is easy, healthy and very filling. 

3 eggs
1/2 red bell pepper, diced
1 handful of spinach
1/4 cup sliced olives
1/4 cup sliced mushrooms
1 tbsp. olive oil or coconut oil

Heat oil in a pan and saute your pepper and mushrooms until soft. Scramble your eggs in a small bowl then pour into a different pan. Continue to cook and scramble the eggs until they are almost all the way cooked through. Then throw all your veggies into the eggs and cook until they are all warm. 

You can eat it as is, or throw a little salsa or avocado on it and enjoy!!
