Paleo Mayo


One of my favorite salmon recipes calls for mayonnaise. Unfortunately, mayo is full of gunk that isn't good for you.  I was searching for recipes to make my own and they are all pretty similar, so here is my version. It's a little time consuming, but definitely quicker than running to the store.

2 eggs
2 cups olive oil
2 tablespoons apple cider vinegar
1 teaspoon yellow mustard
1/2 teaspoon sea salt


In a blender, add the eggs, vinegar, and mustard and blend together well – leave the blender running and slowly, slowly, slowly, drop by drop or very slow drizzle add the oil.  BE PATIENT!!  It takes about 15-20 minutes to do it right.  Turn the blender off once all the olive oil is in and the mayonnaise is thickened to your desired consistency.  Add the salt and mix well or blend again for another few seconds.


I honestly think this stuff tastes better than the store bought junk. I use it (secretly) in food all the time, and nobody can ever tell. :)
