Doesn't it just feel easier to eat salads in the summer? Or maybe it's the fact that I want to run around and play all day in the summer and don't want to spend the time cooking a big feast for my family. Either way this is a really yummy salad. I have used this dressing recipe before, but it is one of my favorites.
3-5 cups romain lettuce, sliced
2-3 chicken breasts cooked and diced
1 avocado, cubed
2 Tbs bleu cheese (optional)
Put all ingredients into a bowl and toss with poppy seed dressing.
Poppy Seed Dressing
1/4
cup honey
1/4
cup apple cider vinegar
1/2
cup olive oil
1/2
Tbs. mustard
1/2
tsp. salt
1/4
red onion
1/2
Tbs. poppy seeds
Blend
all ingredients except poppy seeds until onion is pureed. Add poppy seeds and
pulse a couple of times.
