Spaghetti

When going Paleo, noodles were a very easy thing for me to give up. My kids however, really miss them. So today I decided to be creative and make Paleo spaghetti.

First, have a super awesome grandpa who drops off a bunch of spaghetti squash on your door step, or buy some from the store. I used two squash. I cut them open, cleaned out the seeds, put them in the oven at 350 degrees for 1 hour. When they are done, just get two forks and shred your squash so that it looks like noodles.

While the squash is cooking I starting browning the meat. I threw in onions, mushrooms, lots of garlic, basil and salt. Then pour some tomato sauce over the meat mixture and heat until it's warm. If your buying tomato sauce from the store just make sure you check the ingredients. Very few of them don't contain sugar.

OK for the next part I may be going to hell. I lied to my kids. I was making this hoping they wouldn't catch me making noodles, but they did. With grossed out looks on their faces they asked me, "What are you doing?" I told them, "I am making noodles, this is how they make the kind you buy at the store, I'm just making my own." I'm terrible I know, but on the plus side they loved their spaghetti.
